Tasty Ground Turkey Zucchini (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 cup chickpeas, rinsed and ready
02 - 0.75 cup peas, frozen or canned
03 - 1 cup chopped onion
04 - 1 cup canned diced tomatoes with juice
05 - 2 tablespoons olive oil
06 - 0.25 cup tomato paste
07 - 1.5 cups chopped zucchini (about 1 regular zucchini)
08 - 450 grams ground turkey
09 - 3 garlic cloves, minced

→ Spices & Seasonings

10 - 0.25 teaspoon ground black pepper
11 - 0.5 teaspoon salt
12 - 1 teaspoon garlic powder
13 - 1 teaspoon onion powder
14 - 0.5 teaspoon chili powder
15 - 0.5 teaspoon paprika

→ Cheese

16 - 1 cup shredded mozzarella cheese

# Instructions:

01 - Spoon everything onto plates. It's tasty on its own, but you can pair it with some pasta, quinoa, or rice if you want something extra.
02 - Pull the pan off the stove. Scatter all the mozzarella on top. Pop a lid or plate over it so it melts in just a minute.
03 - Turn down the heat. Let things hang out on the stove, mixing now and then, for 2 to 4 minutes. Stop when the zucchini keeps a little crunch and all veggies are hot.
04 - Dump in the peas, diced tomatoes, chickpeas, zucchini, tomato paste, onion powder, chili powder, garlic powder, paprika, salt, and black pepper. Stir so everything gets evenly mixed.
05 - Shove the turkey to one side of the pan. On the empty side, drop in the last tablespoon of oil, plus onion and garlic. Cook till the onion looks see-through, about 1 or 2 minutes. Blend it all together.
06 - Warm up 1 tablespoon of oil in a big skillet over medium to high heat. Add the turkey. Break it apart with your spatula as it browns up.

# Notes:

01 - If your mozzarella isn't melting the way you want, toss a lid or plate over the pan after turning off the heat. That'll help it turn gooey in no time.
02 - To get the best crunch, don't let that zucchini get mushy. You want it still a bit firm if you poke it with a fork.
