Set your oven to 400°F (200°C) to warm up. While waiting, dice the chicken breasts into chunks about an inch wide, then toss into a bowl.

In that same bowl with the chicken pieces, throw in the cottage cheese, Parmesan, spinach, garlic, and artichoke bits. Mix thoroughly so it all feels like a single blend.

Drizzle some olive oil on the bottom of a 9×13-inch baking dish. Spread the chicken blend across the pan, making it nice and even.

Pop the dish into the already hot oven and leave it uncovered for about 25-30 minutes. The chicken pieces should cook through completely and hit a safe internal temp.

Take the pan out of the oven and serve the food while it's fresh and warm. If you'd like, sprinkle extra spinach on top for a little boost.
