Artichoke Spinach Chicken (Print Version)

# Ingredients:

01 - 2 chicken breasts, large in size
02 - Half a cup of smooth cottage cheese
03 - A quarter cup of freshly diced spinach
04 - 1/2 cup of artichokes, drained and roughly chopped
05 - 2 minced garlic cloves
06 - 1/4 cup of Parmesan, finely grated
07 - A quarter cup of olive oil
08 - Salt and black pepper, as needed

# Instructions:

01 - Set your oven to 400°F (200°C) to warm up. While waiting, dice the chicken breasts into chunks about an inch wide, then toss into a bowl.
02 - In that same bowl with the chicken pieces, throw in the cottage cheese, Parmesan, spinach, garlic, and artichoke bits. Mix thoroughly so it all feels like a single blend.
03 - Drizzle some olive oil on the bottom of a 9×13-inch baking dish. Spread the chicken blend across the pan, making it nice and even.
04 - Pop the dish into the already hot oven and leave it uncovered for about 25-30 minutes. The chicken pieces should cook through completely and hit a safe internal temp.
05 - Take the pan out of the oven and serve the food while it's fresh and warm. If you'd like, sprinkle extra spinach on top for a little boost.
