Crispy Baked Carrot Fries (Printer-Friendly Version)

# What You'll Need:

→ For the Carrot Fries

01 - 2 large carrots, washed
02 - 1 egg
03 - 2 tablespoons water
04 - 6 tablespoons grated Parmesan cheese (use vegetarian hard cheese for veggie version)
05 - ¼ teaspoon salt
06 - ¼ teaspoon pepper

→ For the Dip

07 - 4 tablespoons mayonnaise
08 - 2 teaspoons chili sauce (sweet or hot, your preference)

→ For Garnish

09 - Parsley, chopped

# Let's Cook!:

01 - Preheat the oven to 200°C/400°F (fan). Line a baking tray with parchment paper or a non-stick silicone mat.
02 - Slice the carrots into long, thin pieces, about the size of French fries (no need to peel).
03 - In a shallow dish, mix the egg and water. In another shallow dish, place the grated Parmesan cheese.
04 - Dip each carrot stick in the egg wash, allowing excess to drip off, then roll in the Parmesan. Place on the baking tray. Repeat with all the carrots.
05 - Sprinkle the carrots with salt and pepper. Bake for 15-20 minutes, turning once, until dark golden brown.
06 - While the carrots are baking, mix the mayonnaise and chili sauce in a small bowl.
07 - Remove the fries from the oven, sprinkle with chopped parsley, and serve with the chili mayo dip.
