Preheat the oven to 200°C/400°F (fan). Line a baking tray with parchment paper or a non-stick silicone mat.

Slice the carrots into long, thin pieces, about the size of French fries (no need to peel).

In a shallow dish, mix the egg and water. In another shallow dish, place the grated Parmesan cheese.

Dip each carrot stick in the egg wash, allowing excess to drip off, then roll in the Parmesan. Place on the baking tray. Repeat with all the carrots.

Sprinkle the carrots with salt and pepper. Bake for 15-20 minutes, turning once, until dark golden brown.

While the carrots are baking, mix the mayonnaise and chili sauce in a small bowl.

Remove the fries from the oven, sprinkle with chopped parsley, and serve with the chili mayo dip.
