Cordon Bleu Chicken Loaf (Print Version)

# Ingredients:

→ Base of Meatloaf

01 - 2 pounds ground chicken, lean
02 - 1 egg, big
03 - 1/4 cup breadcrumbs, plain
04 - 2 teaspoons onion, minced
05 - 1.5 teaspoons garlic powder
06 - 1/2 teaspoon parsley, dried
07 - 1.5 teaspoons salt
08 - 1/2 teaspoon black pepper, ground
09 - 1/4 cup mayo

→ Layering and Top

10 - 6 slices of Swiss cheese
11 - 6 slices of chicken ham, Virginia-style
12 - 3/4 cup breadcrumbs, panko

→ Dijon Cream Sauce

13 - 3 tablespoons butter
14 - 3 tablespoons all-purpose flour
15 - 1/4 cup heavy cream
16 - 1 cup milk, low-fat (skim or 1%)
17 - 1 tablespoon mustard, Dijon
18 - 1/2 cup Parmesan cheese, grated
19 - 1/4 teaspoon nutmeg, freshly grated
20 - Pepper and salt to your taste preference
21 - 1 teaspoon Worcestershire sauce

# Instructions:

01 - Set your oven to 400°F (200°C) so it's hot and ready for baking.
02 - Mix the chicken, egg, breadcrumbs, onion, garlic powder, parsley, salt, and pepper together in a big bowl. Add the mayo into this mix to keep things nice and moist. Make sure everything is combined really well.
03 - Coat a loaf pan with grease or line it using some parchment. Put half of the mixed chicken evenly at the base of the pan. Add 3 slices of ham over it, followed by 3 slices of cheese. Spread the other half of the chicken mixture on top, followed by the rest of the ham and cheese.
04 - Pop the pan into your hot oven and let it bake for about 25 minutes. Then, pull it out, sprinkle the breadcrumbs evenly over the top, and bake for another 15 minutes until a thermometer inserted hits 165°F (74°C).
05 - As the loaf finishes baking, melt butter in a medium pot over medium heat. Stir in the flour and cook, stirring, for 1-2 minutes to make a thick roux. Whisk in the cream and milk slowly to keep it smooth. Simmer it gently while adding Worcestershire, mustard, Parmesan, nutmeg, salt, and pepper. Stir until creamy and slightly thick, then take the pot off the heat.

# Notes:

01 - Let the loaf cool for 5-10 minutes first; it'll cut way cleaner.
02 - Warm up the gravy ahead and simply reheat softly if needed.
03 - Switch ground turkey for chicken and go for reduced-fat cheese for a lighter take.
