Cottage Onion Tart (Print Version)

# Ingredients:

→ Filling

01 - 40 g pearl onions, sliced thin
02 - Black pepper, freshly ground
03 - 2 tbsp olive oil
04 - 50 g parmigiano, finely grated
05 - 250 g cottage cheese
06 - 1 egg
07 - 1/3 tsp salt

→ Crust

08 - 1 pie crust, homemade or store-bought

# Instructions:

01 - Line your tart pan with the pastry, pressing it down. Use a fork to poke holes in the base and sides. Pop it into an oven preheated to 200°C (390°F) and bake for about 10 minutes.
02 - In a bowl, whisk together the egg just until it's smooth. Toss in the cottage cheese, parmigiano, and salt, stirring until everything blends well.
03 - Slice the pearl onions thinly after peeling them. Brush one side of those slices lightly with olive oil.
04 - Once your crust has been baked halfway, spread the mixture of cheese and egg evenly over the bottom. Place the oiled onion slices on top, with the brushed side up, then sprinkle some fresh black pepper.
05 - Slide the tart back into the oven for 30-35 minutes, still at 200°C (390°F), until the filling firms up and the onions get a light golden color.

# Notes:

01 - Enjoy warm or let it cool a bit. Pair it with a crisp green salad and your favorite chilled white wine.
