Get your ice cream machine ready ahead of time, following the directions that came with it. No machine? Don’t worry, use the no-machine sorbet steps instead.

Heat up sugar and half the water in a medium pan on high. Stir all the time till the sugar’s dissolved.

Throw in the cocoa powder and salt while whisking. Let the mix boil, then keep stirring for 30 seconds straight.

Take it off the heat and stir in any chocolate or booze you picked. Mix till the chocolate’s completely melted.

Add the rest of the water. Then, pop it in the fridge or freezer till it's nice and cold.

Dump the chilled mix into your ice cream maker and let it churn till it’s done. Eat it right away or let it sit in the freezer for a half-hour if you want it firmer.
