# What You'll Need:

01 - 2 lbs steak filet, ribeye, sirloin, etc.
02 - 4-5 tablespoons avocado oil

→ Parmesan Cream Sauce

03 - 5 tablespoons butter, divided
04 - 10 cloves garlic, minced and divided
05 - 1.5 cups heavy cream
06 - 2 green onions, diced
07 - 1 teaspoon red pepper flakes (adjust to taste)
08 - 2/3 cup Parmesan, grated/shredded/shaved

→ Cheesy Mashed Potatoes

09 - 4 lbs russet potatoes
10 - 1 cup half and half, warmed
11 - 6 tablespoons salted butter, melted
12 - 3/4 cup Monterey Jack cheese, shredded (or mozzarella, pepper jack, etc.)
13 - 1 teaspoon garlic powder
14 - 3/4 teaspoon salt
15 - Pepper to taste (about 1/2 teaspoon)

→ Homemade Blackened Seasoning

16 - 2 tablespoons smoked paprika (regular paprika works too)
17 - 1 tablespoon cayenne pepper
18 - 1 tablespoon onion powder
19 - 2 teaspoons garlic powder
20 - 1 teaspoon ground black pepper
21 - 1 teaspoon salt
22 - 1/2 teaspoon dried thyme
23 - 1/2 teaspoon dried oregano

# Let's Cook!:

01 - Cut steak into pieces, rub with avocado oil, and season with blackened seasoning. Let sit for 10-15 minutes. Peel and quarter potatoes, soak in cold water for 10 minutes, then boil until tender.
02 - Cook steak in a skillet with avocado oil until golden. Sauté with garlic butter, then set aside. Boil potatoes until tender, then mash with butter, cream, and cheese.
03 - In the same skillet, sauté garlic in butter, whisk in heavy cream, and simmer until thickened. Add red pepper flakes, green onions, and Parmesan cheese.
04 - Plate the steak over the mashed potatoes and spoon the Parmesan cream sauce over the top.
