Greek Yogurt Cake Recipe (Printer-Friendly Version)

# What You'll Need:

01 - 1 large egg
02 - 180 grams (⅔ cup) Greek yogurt
03 - 1 ripe banana, about 100 grams (3.5 oz.), or ½ cup applesauce
04 - 80 ml (⅓ cup) maple syrup, or honey
05 - 150 grams (1 ½ cup) oat flour, or preferred flour
06 - 50 grams (½ cup) almond flour, or more oat flour
07 - 1 teaspoon vanilla extract
08 - 2 teaspoons baking powder
09 - ⅙ teaspoon salt
10 - 60 ml (¼ cup) milk of choice

→ Optional Ingredients

11 - 50 grams (¼ cup) chocolate chips, dark or extra dark

# Let's Cook!:

01 - Preheat oven to 180ºC (360°F) and line a 20 cm (7.8 inches) cake mold with parchment paper.
02 - Mash the banana and combine with Greek yogurt, egg, maple syrup, vanilla extract, and salt. Mix in oat flour, almond flour, and baking powder, then gradually add milk. Optionally, mix in chocolate chips.
03 - Transfer the batter to the prepared mold and bake for about 30 minutes until a toothpick inserted into the center comes out clean.

01 - Use all oat flour if preferred.
02 - Substitute banana with ½ cup of applesauce.
03 - Use honey instead of maple syrup if desired.
04 - Add nuts or dried fruits for extra flavor.
