Loaded Baked Potato with Steak Bites (Printer-Friendly Version)

# What You'll Need:

→ Potatoes

01 - 4 large russet potatoes, scrubbed clean and patted dry
02 - 4 tablespoons olive oil
03 - 1.5 tablespoons sea salt

→ Steak Bites

04 - 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
05 - 2 teaspoons kosher salt
06 - 2 tablespoons garlic, minced
07 - 6 tablespoons butter, softened
08 - 2 tablespoons Cajun seasonings
09 - 4 tablespoons avocado oil, divided

→ Parmesan Cream Sauce

10 - 1 1/2 cups heavy cream
11 - 2/3 cup parmesan, grated
12 - 2 tablespoons fresh parsley, minced
13 - 2 wedges lemon, juice of
14 - 1/2-1 teaspoon red pepper flakes
15 - 1 teaspoon freshly cracked pepper

# Let's Cook!:

01 - Preheat oven to 425°F. Rub potatoes with olive oil and salt, then bake for 50-60 minutes until tender.
02 - Trim and cut steak into 2" pieces. Coat with avocado oil and Cajun seasoning. Sear in a skillet, then cook in garlic butter.
03 - In the same skillet, whisk heavy cream, butter, garlic, red pepper flakes, and parmesan until thickened. Add parsley and lemon juice.
04 - Fluff the baked potatoes and stuff with steak bites. Drizzle the cream sauce over the top and serve.
