In a skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain excess fat. Add maple syrup, black pepper, garlic powder, onion powder, and salt. Stir to combine, then remove from heat and set aside.

Lay out the tortillas. Sprinkle half of the shredded cheese on one half of each tortilla. Top with the cooked beef mixture and crumbled bacon. Add the remaining cheese on top.

Fold each tortilla in half to cover the filling. Heat butter or oil in a large skillet over medium-high heat. Cook each quesadilla for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown.

Slice the quesadillas into wedges and serve warm. Drizzle with extra maple syrup and top with diced tomatoes, pickles, or shredded lettuce if desired.
