Oreo Cheesecake Bars Recipe (Printer-Friendly Version)

# What You'll Need:

→ Crust

01 - 22 Oreos (about 2 cups finely crushed)
02 - 4 tablespoons salted butter, melted

→ Cheesecake

03 - 2 (8-ounce) packages full-fat cream cheese, room temperature
04 - ⅔ cup granulated sugar
05 - ½ cup sour cream, room temperature
06 - 2 teaspoons pure vanilla extract
07 - 2 large eggs, room temperature
08 - 14 Oreos, roughly chopped (divided)

# Let's Cook!:

01 - Preheat oven to 325°F. Mix crushed Oreos and melted butter, press into pan, and bake for 10 minutes.
02 - Beat cream cheese and sugar until smooth. Add sour cream and vanilla, then eggs one at a time. Fold in half of the chopped Oreos.
03 - Spread cheesecake mixture over crust, sprinkle remaining Oreos on top, and bake for 40-45 minutes until set.
04 - Cool to room temperature, then chill for at least four hours before serving.
