# Ingredients:

→ Cookie Dough

01 - 1 cup creamy peanut butter
02 - 1/2 cup unsalted butter, softened
03 - 1/2 cup granulated sugar
04 - 1/2 cup brown sugar, packed
05 - 1 large egg
06 - 1 teaspoon vanilla extract
07 - 1 1/2 cups all-purpose flour
08 - 1/2 teaspoon baking powder
09 - 1/2 teaspoon baking soda
10 - 1/4 teaspoon salt

→ Filling

11 - 1/2 cup grape or strawberry jelly (or preferred flavor)

# Instructions:

01 - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
03 - Add the egg and vanilla extract, mixing until well combined.
04 - In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
05 - Gradually add the dry ingredients to the wet ingredients, mixing to form a smooth dough.
06 - Scoop out 2 tablespoons of dough and flatten into discs. Place half of the discs onto the prepared baking sheet.
07 - In the center of each disc, add 1 teaspoon of jelly.
08 - Top each with another dough disc, pressing the edges to seal. Gently press the edges with a fork for a decorative touch.
09 - Bake for 12-15 minutes, until the edges are golden.
10 - Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
