# Ingredients:

01 - 1 medium Yukon gold potato, peeled and diced into ½-inch pieces
02 - 1 tbsp butter
03 - ½ cup chopped onions (about ½ small onion)
04 - ¾ cup chopped red bell pepper (about ½ small bell pepper)
05 - ¾ cup chopped green bell pepper (about ½ small bell pepper)
06 - 1 clove garlic, minced
07 - ½ tsp Creole seasoning (or salt and black pepper)

# Instructions:

01 - Bring a pot of water to a boil and add the diced potatoes. Cook for 3 minutes, then drain and set aside.
02 - Melt butter in a 10-inch skillet over medium heat. Add onions, bell peppers, and garlic to one side of the pan, and potatoes to the other. Sprinkle with Creole seasoning (or your preferred blend).
03 - Let potatoes cook untouched for 3-4 minutes until golden brown. Stir everything together and cook for a few more minutes until potatoes are crisp.
04 - Adjust seasoning if needed and serve hot!

# Notes:

01 - You can substitute Creole seasoning with a blend of salt, black pepper, paprika, and cayenne for a different flavor profile.
02 - For extra crispiness, let the potatoes cook untouched for a bit longer in the pan.
