Easy Quesadilla Burgers (Printer-Friendly Version)

# What You'll Need:

→ For the Burgers

01 - 1 ¼ pounds ground beef
02 - ¾ teaspoon salt

→ For the Chipotle Mayo

03 - ½ cup mayonnaise
04 - 1 tablespoon chipotles in adobo, minced
05 - 2 teaspoons lime juice

→ For Assembly

06 - 2 tablespoons butter
07 - 8 small tortillas
08 - 1 ½ cups Colby jack cheese, shredded
09 - 1 cup pico de gallo
10 - ½ cup shredded lettuce

# Let's Cook!:

01 - Preheat a grill to medium heat. In a large bowl, gently combine the ground beef and salt. Form into 4 patties. Grill for 3-4 minutes per side, or until the desired doneness is reached.
02 - In a small bowl, stir together the mayonnaise, chipotles in adobo, and lime juice. Set aside.
03 - Melt 1 tablespoon of butter in a large skillet or on an electric griddle over medium heat. Place 4 tortillas on the griddle and top each with half the cheese. Place a burger on each cheese-topped tortilla.
04 - Top each burger with a spoonful of the chipotle mayo, spreading it evenly. Divide the pico de gallo and shredded lettuce between the burgers.
05 - Carefully remove the burger-topped tortillas from the skillet once the cheese has melted. Melt the remaining butter in the skillet and add the remaining 4 tortillas. Top each with the remaining cheese and cook until the cheese melts and the tortillas are crispy.
06 - Place the cheese-topped tortillas, cheese side down, on top of the shredded lettuce-topped burgers. Serve immediately.

# Cook's Notes:

01 - For a spicier kick, add extra chipotles in adobo to the mayo mixture.
02 - You can use any type of cheese you prefer, such as cheddar or pepper jack.
03 - Serve with extra pico de gallo or guacamole on the side for dipping.
