Spicy Jalapeño Grilled Cheese (Printer-Friendly Version)

# What You'll Need:

→ For the Jalapeños

01 - 4 medium jalapeños, stems removed, sliced in half, and seeded
02 - 1 tablespoon olive oil

→ For the Cream Cheese Mixture

03 - 4 ounces cream cheese, room temperature
04 - ½ teaspoon garlic salt
05 - ¼ teaspoon black pepper
06 - ½ teaspoon onion powder

→ For the Sandwich

07 - 1 cup (113 g) mild cheddar cheese, shredded, divided
08 - 6 strips bacon, cooked, divided
09 - 4 slices Texas toast (or your bread of choice)
10 - 4 tablespoons unsalted butter, divided

# Let's Cook!:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - Brush the jalapeños with olive oil on all sides and place them on the prepared baking sheet. Roast for about 15 minutes, or until the skin begins to char slightly. Remove from the oven and let cool slightly.
03 - In a medium mixing bowl, combine cream cheese, garlic salt, black pepper, and onion powder. Mix until creamy. Once the jalapeños are cool enough to handle, roughly chop them and fold them into the cream cheese mixture.
04 - Butter one side of one slice of bread. On the opposite side, spread half of the cream cheese mixture. Top with 3 slices of bacon and ½ cup of cheddar cheese. Place another slice of bread on top and butter the outside. Repeat with the remaining ingredients.
05 - Heat a skillet over medium heat. Add the buttered sandwich and cook for 3-5 minutes per side, or until the bread is toasted and the cheese is melted. Serve immediately.

# Cook's Notes:

01 - For a spicier version, leave some of the jalapeño seeds in the mixture.
02 - You can use any bread of your choice, but Texas toast works best for a thick, hearty sandwich.
03 - Serve with a side of ranch dressing or sour cream for dipping.
