02 - 1 lb (450g) smoked halal sausage, sliced into ½-inch rounds
03 - 1 large yellow onion, cut into wedges
04 - 3 tablespoons olive oil
05 - 1 teaspoon garlic powder
06 - 1 teaspoon smoked paprika
07 - ½ teaspoon dried thyme (or rosemary)
08 - Salt and black pepper, to taste
09 - Fresh parsley, for garnish (optional)

# Let's Cook!:

01 - Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
02 - Place the chopped potatoes, sausage slices, and onion wedges in a large mixing bowl. Drizzle with olive oil, then sprinkle garlic powder, smoked paprika, thyme, salt, and pepper over the mixture. Toss until evenly coated.
03 - Spread the mixture in a single layer on the prepared baking sheet. Roast in the preheated oven for 30–35 minutes, stirring halfway through, until the potatoes are tender and golden and the sausage is slightly crisp.
04 - Remove from the oven and garnish with fresh parsley if desired. Serve warm.

# Cook's Notes:

01 - Add chopped bell peppers or carrots for extra crunch and flavor.
02 - Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or on the stovetop for the best results.
03 - Swap smoked sausage with turkey sausage or chicken sausage for a lighter option.
04 - Adjust seasonings to your preference. Smoked paprika or Cajun seasoning can add an extra kick of flavor.
