# Ingredients:

01 - 4 large flour tortillas (8-10 inches)
02 - 4 large eggs
03 - 4 sausage links (or ½ pound ground breakfast sausage)
04 - ½ cup (60g) shredded cheese (cheddar, Monterey Jack, or your choice)
05 - ¼ cup (60ml) milk
06 - 1 tablespoon butter or oil
07 - Salt and pepper to taste

08 - ¼ cup diced bell peppers or onions
09 - ¼ cup chopped spinach
10 - Salsa for serving

# Instructions:

01 - Cook sausage links (8-10 minutes, turning) or ground sausage (breaking into crumbles) until fully cooked. Drain on paper towels.
02 - Whisk eggs with milk, salt and pepper. Cook in butter/oil over medium-low until just set but still soft.
03 - Layer cheese, eggs, sausage, and optional veggies on tortillas. Roll tightly, tucking in sides.
04 - For crispy exterior, cook roll-ups seam-side down in skillet 1-2 minutes per side until golden.
05 - Enjoy warm with salsa or favorite dips. Perfect for on-the-go breakfast!
