Set your oven to 175°C. Place the nuts in and let them toast for 8 to 10 minutes.

Warm the honey in a pan until the temperature hits 120°C.

Mix water and sugar in a pan, then heat it until it gets to 150°C.

Whip the egg whites until they’re soft peaks. Slowly drizzle in the warm honey.

Mix the sugar syrup into the eggs, then gently stir in the nuts and vanilla or zest.

Pour the mix into a dish lined with parchment. Spread evenly and let it firm up for four hours.

Slice into portions. Serve immediately or keep for later.
