Soft Italian Torrone (Print Version)

# Ingredients:

01 - 60ml water
02 - 200g sugar
03 - 340g honey
04 - 2 egg whites
05 - 100g pistachios or mixed nuts, toasted
06 - 100g almonds, toasted
07 - 1 tsp zest or vanilla extract

# Instructions:

01 - Set your oven to 175°C. Place the nuts in and let them toast for 8 to 10 minutes.
02 - Warm the honey in a pan until the temperature hits 120°C.
03 - Mix water and sugar in a pan, then heat it until it gets to 150°C.
04 - Whip the egg whites until they’re soft peaks. Slowly drizzle in the warm honey.
05 - Mix the sugar syrup into the eggs, then gently stir in the nuts and vanilla or zest.
06 - Pour the mix into a dish lined with parchment. Spread evenly and let it firm up for four hours.
07 - Slice into portions. Serve immediately or keep for later.

# Notes:

01 - Blend different nuts if you’d like a richer taste.
02 - A pinch of cinnamon or cocoa can add something special.
03 - Pack in an airtight jar to lock in freshness.
