Pour the dried coconut into a wide dish. Roll each log in the coconut until covered all over.

Take the blended mixture, split it into 16 pieces, and roll each one into a small log shape.

Tip the dates into the processor along with the chopped almonds. Keep blitzing everything and scrape the sides now and then. Stop when it turns into a sticky and even dough.

Toss the whole almonds into a food processor and pulse until they're all in fine bits.
