Medjool Dates Almond Coconut (Print Version)

# Ingredients:

→ Coating

01 - 35 g dried shredded coconut

→ Base

02 - 100 g whole almonds
03 - 400 g Medjool dates with pits removed

# Instructions:

01 - Pour the dried coconut into a wide dish. Roll each log in the coconut until covered all over.
02 - Take the blended mixture, split it into 16 pieces, and roll each one into a small log shape.
03 - Tip the dates into the processor along with the chopped almonds. Keep blitzing everything and scrape the sides now and then. Stop when it turns into a sticky and even dough.
04 - Toss the whole almonds into a food processor and pulse until they're all in fine bits.

# Notes:

01 - Coconut not sticking well? Wet the logs a tiny bit and try rolling them again.
02 - Not a fan of logs? Shape the mixture into round truffle bites instead.
03 - Switch up the coating with finely chopped nuts instead of coconut if you like.
04 - Try pistachios instead of almonds if you're craving a new flavor.
