Colorful Cookie Sandwiches (Print Version)

# Ingredients:

→ Sugar Cookies

01 - 1 ½ cups white sugar
02 - 1 cup softened unsalted butter
03 - 2 teaspoons of vanilla flavoring
04 - 1 large egg
05 - ½ teaspoon salt
06 - 2 tablespoons milk
07 - 2 ¾ cups all-purpose flour
08 - ½ teaspoon baking powder
09 - 1 teaspoon baking soda
10 - Gel food coloring (green, purple, yellow, blue, pink)

→ Vanilla Filling

11 - 2 cups of powdered sugar
12 - Pinch of salt
13 - ½ cup unsalted butter, softened
14 - 2 tablespoons milk or heavy cream
15 - 1 teaspoon vanilla flavoring

# Instructions:

01 - Turn your oven to 350°F (175°C). Put down parchment paper on a baking sheet and keep it ready nearby.
02 - Using a big bowl and a mixer, whip the butter and sugar together until it’s fluffy and smooth—this should take about 2 minutes. Toss in the egg and vanilla, and blend till it’s all combined.
03 - In another bowl, whisk together baking powder, baking soda, flour, and salt. Slowly mix these dry things into the bowl of wet ingredients. The dough will feel soft, though it’s thick. Pop in the milk and keep mixing until it’s smooth.
04 - Split the dough into five parts. Add a little gel food coloring to each one and work it through until the color is even. Go for pastel shades.
05 - Grab a tablespoon of dough and roll it up into a small ball. Place it on the baking sheet, leaving about 2 inches in between. Put it in the oven for 8-10 minutes, just until the edges look set and the tops are slightly cracked, not brown. Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
06 - Beat the butter in a bowl until it’s smooth. Slowly stir in the powdered sugar, then add the vanilla, salt, and milk (or cream). Mix everything until it’s fluffy and easy to spread. Add more powdered sugar if it’s too runny, or a little milk if it’s too thick.
07 - Once the cookies are cool, pair them by size. Spread filling on the flat side of one cookie with a spoon or piping bag. Place another cookie on top, gently pushing down to spread the filling evenly.
08 - Give the assembled cookie sandwiches about 10 minutes to sit so the filling can set a bit before digging in.
