Effortless Fruity Pebbles Bread (Print Version)

# Ingredients:

01 - 80 g Fruity Pebbles or a similar fruity cereal, save some for on top
02 - 190 g all-purpose flour
03 - 2 teaspoons baking powder
04 - 0.5 teaspoon fine salt
05 - 0.5 teaspoon vanilla extract
06 - 3 large eggs
07 - 120 ml vegetable oil or swap in unsweetened applesauce
08 - 240 g Greek yogurt, plain
09 - 250 g white granulated sugar

# Instructions:

01 - Let the loaf hang out in the pan for about 10 minutes once it’s out of the oven. Pop it onto a rack, then slice when you’re ready. Dig in whenever you want!
02 - Slide it into your oven and bake for about 45–55 minutes. Check with a toothpick—it should come out clean from the center.
03 - Scrape the batter into your greased pan. Toss a little extra Fruity Pebbles on top, however much you fancy.
04 - Carefully mix in 80 g of the cereal, just enough so it's mixed through but still crunchy.
05 - Sprinkle in the flour, baking powder, and salt into your wet stuff. Don’t go wild here—mix just until you no longer see streaks.
06 - In a big bowl, whisk up sugar, yogurt, eggs, oil or applesauce, and vanilla. Go until it's all smooth and looks blended.
07 - Fire up your oven to 175°C. Coat your loaf pan really well with non-stick spray, getting all the corners.

01 - Want less fat in it? Use applesauce instead of oil—it keeps it moist, too.
