# Ingredients:

01 - 1 scoop vanilla protein powder (dairy-free or regular options work)
02 - 1 tablespoon zest from lime, plus extra for sprinkling later
03 - 1 teaspoon vanilla essence
04 - 3½ tablespoons juice from key limes
05 - 2 tablespoons powdered Swerve (or swap for 1 tablespoon honey)
06 - 2½ cups plain Greek yogurt (low-fat or fat-free for protein boost)

07 - ¼ cup coconut flakes, toasted and unsweetened
08 - ⅓ cup crushed gluten-free graham crackers (like Simple Mills Honey Cinnamon Sweet Thins)

# Instructions:

01 - Grab a medium bowl and toss in the Greek yogurt, lime juice, protein powder, zest, powdered Swerve (or any sweetener you prefer), and vanilla. Stir everything until smooth. Make sure you don’t leave protein powder chunks behind.
02 - Cover your baking tray with parchment paper or a silicone mat. Pour the yogurt mixture onto it, then use a spatula to spread it evenly in a thin layer, about ¼-inch thick.
03 - Scatter the crushed crackers and toasted coconut flakes on top of the yogurt. You can also sprinkle more lime zest for a bit of zing. Gently press down to make sure the toppings stick to the frozen layer.
04 - Put the baking tray flat into the freezer and leave it there for 2-3 hours. Let it stay in until everything becomes firm and frozen.
05 - Once frozen solid, take the tray out. Peel the parchment or mat off the yogurt. Snap or slice the frozen yogurt slab into pieces that are the size you like.
06 - Enjoy the frozen bark right away if you’re in the mood, or stash the pieces in a sealed container in the freezer. Use parchment sheets between layers if you’re stacking them so they don’t stick together.
