Move your fried treats onto a wire rack so the oil drips off. Brush each one with that maple topping while they're still warm. If you're into extra sweetness, sprinkle on more powdered sugar. Enjoy them right away.

Pour about 2.5 centimetres' worth of vegetable oil in a solid pan. Get the oil hot until it’s 175°C. Lay a dough oval or two in (don’t crowd the pan). Fry until bubbly and golden underneath, then flip and finish the other side till nicely browned.

After the dough’s puffed up, grab it and pull off 6 or 7 chunks. Roll them into balls, then squish each one down with oiled hands so they're long and oval-shaped.

Toss butter in a saucepan over medium heat. Let it melt and bubble, stirring for about 5 or 6 minutes until it smells nutty and turns a deep gold. Put into a bowl, stir in vanilla, maple syrup, and powdered sugar, and mix until it’s smooth. Leave it aside for now.

Coat a bowl lightly with your melted butter. Pop in the dough, place some plastic wrap and a towel over top, and leave it somewhere snug and warm. Wait about an hour till it puffs up to double its size.

Set up your stand mixer and use its dough hook. Let it knead the dough for around a minute, or until it feels stretchy, soft, and sticks together. If too dry or too wet, just sprinkle in flour or splash a little water to fix it.

Into that yeast mixture, pour in the sugar, flour, and finally the salt. Mix it up till everything kind of clumps into a messy dough.

In a big bowl, mix together the warm water and milk. Sprinkle the instant yeast right on top, then whisk quickly so it all dissolves.
