Turn the oven on to 400°F (200°C) and let it warm up.

Combine whole-grain mustard, Dijon mustard, olive oil, garlic, thyme, salt, and pepper in a small bowl. Stir well.

Coat the chicken thighs all over with the mustard mixture, making sure it’s spread evenly.

Put the chicken pieces on a baking tray lined with parchment paper.

Cook the chicken in the oven for 35-40 minutes. It’s ready when the internal temperature hits 165°F (74°C).

Leave the chicken to cool for about 5 minutes before digging in.
