Zesty Mustard Thighs (Print Version)

# Ingredients:

01 - 1 teaspoon fresh thyme, chopped
02 - 1 tablespoon garlic, finely minced
03 - 2 tablespoons olive oil
04 - 3 tablespoons Dijon mustard
05 - Salt and black pepper, add to taste
06 - 4 chicken thighs, bone-in, skin-on
07 - 2 tablespoons whole-grain mustard

# Instructions:

01 - Turn the oven on to 400°F (200°C) and let it warm up.
02 - Combine whole-grain mustard, Dijon mustard, olive oil, garlic, thyme, salt, and pepper in a small bowl. Stir well.
03 - Coat the chicken thighs all over with the mustard mixture, making sure it’s spread evenly.
04 - Put the chicken pieces on a baking tray lined with parchment paper.
05 - Cook the chicken in the oven for 35-40 minutes. It’s ready when the internal temperature hits 165°F (74°C).
06 - Leave the chicken to cool for about 5 minutes before digging in.

# Notes:

01 - Pair with a fresh salad or roasted veggies for a nice meal.
02 - For crispier skin, switch the oven to broil for the last couple of cooking minutes.
