12 - 2 tablespoons ketchup
13 - 1 teaspoon Worcestershire sauce
14 - 1 teaspoon horseradish (optional)
15 - ½ teaspoon smoked paprika
16 - ¼ teaspoon garlic powder
17 - Salt and pepper to taste

# Instructions:

01 - Peel and cut the onions into bite-sized wedges, keeping the layers intact. Place the onion wedges in a bowl of buttermilk and let them soak for 10 minutes.
02 - In a shallow dish, combine flour, paprika, garlic powder, onion powder, cayenne pepper, and salt. Place panko breadcrumbs in a separate dish.
03 - Remove the onions from the buttermilk, letting excess drip off, and coat them in the flour mixture. Return the coated onions to the buttermilk. Roll the onions in panko breadcrumbs until fully coated.
04 - In a deep skillet or pot, heat vegetable oil to 350°F (175°C). Fry the onions in small batches for 2-3 minutes or until golden brown. Remove and drain on paper towels.
05 - In a small bowl, combine mayonnaise, ketchup, Worcestershire sauce, horseradish, smoked paprika, and garlic powder. Season with salt and pepper to taste.
06 - Arrange the blooming onion bites on a platter and serve with the dipping sauce.

# Notes:

01 - Sweet onions are perfect for frying with a mild, natural sweetness.
02 - Panko breadcrumbs ensure a light and crispy texture.
03 - Buttermilk helps the coating adhere to the onions.
04 - These can be served as an appetizer or side dish.
